Gluten Free Necessity

Welcome to my newly revamped baking, cooking, life blog!

    So in September of 2019 I found out that the random rash type thing I had had for months was hives. After visiting two doctors and having bloodwork done I was informed that I have low IGA levels. Which to my understanding also means that they can't tell from your blood if you have Celiac disease. I declined the biopsy test and instead completely cut out all gluten from my diet.

    I still feel, almost a year later that I am in the healing process and I have a huge learning curve in how I bake that I am still working through...I miss kneading bread. While some sweet treats have resolved other things like bread, cinnamon rolls, and babka are more challenging and I have yet to master them. I had already been attempting to eat low histamine as a way to help with my allergies and chronic sinus infections for a few years so this made no gluten feel a bit less restrictive. I love the baking process of kneading bread but I honestly didn't eat a ton of bread. I'm more a sweets girl... though I really enjoy a good breadstick or garlic bread! You will find low histamine things dropped in here too.

    I re-did the cover and name of this blog at the end of last year then the holidays and covid happened and now I am on the "what do I do about school" train with my oldest daughter. I plan to try to post more on here. Mostly about gluten but also about life.

    We just finished a complete tear out remodel of a Jayco TT and I plan a big post with photos and details.
